“Leitão à Bairrada” - One of the 7 Wonders of Gastronomy in Portugal

Roasted suckling piglet “Bairrada Style” is one of those most well-known and appreciated regional dishes in Portugal, having been named one of the 7 Wonders of Gastronomy in Portugal.


It is a fact that since the 17th century, pig breeding has become a surplus in the Bairrada Region and this fact has been a major boost that has led to its commercialization. But be wary as there are a series of measures to be to be undertaken so that it may be certified as a true DOC, such as every half hour, removing the piglet from the oven and wipe the excess fat with a cloth on the skin... This is called “constipar o leitão <sweating the piglet>”... When removing the piglet and cleaning it, it undergoes a cold shock, which will lead to the roast having a hard and crispy skin.


It is served very hot decorated with orange wheels and accompanied with extra-thinly sliced potatoe fries and lettuce.
